It's out.
Haven't played with it yet because it takes an entire hour to update my phone. Not to mention it broke my phone twice at first, but appears to be working now.
Seriously, though, don't update until you've got a spare hour to dedicate to the process. I had no idea an iOS update could take this long (they usually take 10-15 minutes at best).
First impression:

Mine failed to restore without a manual reset of the phone. Still restoring now...
I think an hour is fairly typical for the major updates (2->3, 3->4). It's the minor ones that are quick, I don't think they require a full restore. _________________

I don't recall the iOS 4 update taking this long, but I also never had the trouble I had with this update either.
PROTIP: If you upgrade, and your apps refuse to launch, delete an app and redownload it from the iTunes store (if you have it, iBooks is best for this because of the fact that the App Store will bug you to install it if you don't have it installed). That should make the problem go away.
Also, if you're looking for a reason to upgrade, I have two words: Notification. Centre.

Yep the new notifications are great. Hated how they always disappeared as soon as you unlocked the phone.
Anyone understand this iCloud thing? So far it only seems of use for my pics as I don't use outlook for email, calendar and so on _________________

Some games are being updated to save with iCloud, meaning if you go on another device your saves will be there. Along with settings and such.

Be aware that you can't delete individual photos from your iCloud stream, even if you delete them from your iDevice. You have to turn the entire stream off to remove photos from it.

I noticed something downloading while another app was installing, the two apps installing at the same time (had 11 or so updates). So I think they've changed it so the next app downloads while the previous one installs. I approve!

I've been using it for the last few months or so and it's not bad, but nothing massively major either.
You'd be surprised how fast your iCloud data gets used up. Wifi-Sync works OK. The only good thing I like about it that's worth a mention is how it automatically backs up your iPhone at night. My iPhone shit itself and I reinstalled iOS 5 only to have it restore itself which was pretty nifty. _________________

Explain to me this 'iCloud' business - outside of a bunch of games failing submission 'cause they don't adhere to the recent requirement changes regarding save path for the iCloud functionality, I know SFA about it.
Does it benefit users with only a single device at all? Or is it not device centric, but rather 'authorized iTunes installs' based?
I'm interested, but not enough to LMGTFY, nahmean? _________________

It's more for sharing between computers and stuff but it has it's advantages on just a phone ie it keeps keeps backups of your phone in case it get corrupted. _________________

Been using the betas since release for work to test iDevice functionality (urgh! never again), so glad they fixed the astronomical amount of bugs I found in the betas. My phone updated in twenty minutes, mind you I did it before 6am and was getting 800+ KBps on the download. Some guys were trying at work around 9am and were only getting 150ish.
Best feature is location based reminders. Was in Adelaide a month or so ago and had reminders set to make sure we didn't leave anything behind at the many places my group was visiting (someone forgot baby meds, whoops).

I think you're understating things a bit here. The notification system alone is a huge improvement over what was there before. I gotta admit, I'm liking iOS 5. After taking a few hours to update my iPad and iPhone, then restoring all the apps, music and video (it's a fairly painless process just that it's pretty long), I'm finding a lot of little things here and there they've added to be pretty handy.
iMessages isn't bad once you set everything up, handy for the iPad as mentioned before the tabs in the browsing, I like how you can swipe away the keyboard now in messages fairly easily. Oh, I'm really loving iCloud, love how all my apps and what not sit up there and I can easily transfer what I want to whatever device I want it on.
Well now I gotta go get me one of those new fangled iPhone 4S to complete my Apple venture, it's funny I sit here typing this on the new MacBook Air surrounded by my iPad 2 and iPhone 4.  _________________

I've had mine working with current location. But then again I haven't really played with the fully working version. I'm just pleased to have a functional phone again after the betas.

Has a bunch of 'apps' for the iCloud. Main one I see a use for is the Find My Phone, but reminders could be useful. The others seem to be more if you're using a Mac (or at least Outlook). _________________

Quite liking the scrolling text for songs now. Always been one flaw I've seen.
The Assistivetouch thingy is kinda neat too.
It's always the little things in these updates that make me the most content. _________________

This update nearly stuffed up my dad's iPhone4G coz it didnt update properly and because of that he had all of his contacts details wipe out. luckily for me I had no problems
