Avoid anything that's been a victim of the Loudness War and you should be okay.
Specific examples for me:
Leftfield - Leftism
Neil Young & Crazy Horse - Weld (or, really, anything from Freedom on. Young is a huge audiophile and all his 1990s and 2000s albums have great production).
Solar Fields - anything. Mirror's Edge OST is probably easiest to get on CD, though.
A lot of J-Pop and J-Rock is good too, as Japan hasn't been afflicted by the loudness wars yet. Ayumi Hamasaki, for example.

Yeah, yah, that's the point of the question I guess I'm curious as to what people use! Also, on what formats (CD/ Vinyl/ MP3)

Solar fields - Leaving Home. Awesome album. Glad to hear someone else knows of him. Stormin, the label he is on - Ultimae is full of top notch ambient artists. My favourite though is Carbon Based Lifeforms. Great production on pretty much every release. _________________ I'd be apathetic, but I can't be arsed.
