Sub-Zero died in Mortal Kombat by the specter Scorpion who wanted to avenge his own death.

His brother takes over as Sub-Zero in Mortal Kombat II and so on.

EDIT: Forgot to add that this game is a reboot.

Is it a complete reboot? I thought MK 1,2,3 were still canon and this is replacing MK4 or something?

^From what I was hearing at E3 it's both. Something to do with Raiden and time travel - like he goes back in time or he sends a message to MK1 Raiden and it alters the events of MK1-3, so everything old is new again like the new Star Trek movie.
